Everybody Loves Waffles

Brunch is one of my favorite meals of the day.  Especially on a lazy Sunday after sleeping in a couple extra hours.  I was especially hungry this morning and was craving something sweet, so I decided to make Belgian waffles with a honey cinnamon butter.  As long as you have the waffle maker, this is a very simple thing to make.  You want to start with the butter, so it has time to chill in the fridge.  This is a recipe I came up with that can be used for a variety of things (i.e.- pancakes, mashed sweet potatoes, muffins, etc.)

Homemade Honey-Cinnamon Butter
2 sticks unsalted butter (softened)
2 tbsp. milk
2 tbsp. cinnamon
1/2 cup honey
1. blend all ingredients into mixer, using a flat paddle for 5 minutes (should be glossy and fluffy)
2. place in bowl and chill in fridge for at least 20 minutes before serving

While the butter is chilling, you can turn the waffle iron on and begin making the waffle mixture.  The recipe we used for the waffles (from Always with Butter Blog, that I slightly modified) is as follows: 

2 Belgian Waffles
1 cup flour
1 1/2 tsp.baking powder
1/2 tsp. salt
2 tbsp. sugar
1 egg 
1 cup milk 
2 tbsp. melted butter
1. turn on waffle maker
2. whisk flour, baking powder, salt & sugar together - set aside
3. whisk egg & milk together
4. slowly add milk mixture to flour mixture
5. stir in melted butter
6. pour onto heated waffle maker
7. cook time varies per waffle maker, but cook till golden brown and slightly crispy

It is best to let the waffles rest on a cooling rack for a minute before you serve them, (this way the steam can dissipate and not make the waffle soggy).   Once you plate the waffles, place a dollop of the honey-cinnamon butter on top, coat with syrup, garnish with a dusting of cinnamon, and
